Danielle’s Game Day Dish: Preseason Week 4

I just finished stuffing my face full of this dish and as this site’s unofficial taste tester, it gets my full approval! This might be the best idea Vikings Territory has ever had (at least my stomach thinks so).

Last week was amazing! The Vikings played their first game in the new stadium and they won! Let’s keep the good vibes going for the rest of the season so we can see many more wins!

Having lived near Buffalo, NY for so long, it was easy to see buffalo sauce everywhere and included with a lot of fried foods. Honestly, I can’t blame anyone for having buffalo sauce on their food since it is so good.

Buffalo chicken wing dip is a staple appetizer and is something that has been served at every party I have ever been to. Since it is so popular, I wanted to feature some sort of buffalo chicken at some point but I wanted it to be different and as usual, something easy to eat on the couch. That is when I came up with the buffalo chicken bites.

These are fairly easy to make and 2 chicken breasts makes about 30 bites, meaning you can make a large amount food with a small amount of ingredients. If you are making a large amount, you can also prepare the chicken ahead of time and keep it in the refrigerator until you are ready to seal the wonton wrappers and fry them up.

Boiling the chicken in the broth helps gives the bites more flavor and combined with the buffalo sauce, the chicken is so moist and tender that it would make a great meal alone. Once you add the cheddar to the chicken, you know what you are going to eat will be out of this world. Frying the bites in the breadcrumbs, gives a fantastic crunch and paired with the warm, cheesy, spicy insides, these bites are heaven in your mouth.

Buffalo Chicken Bites

Ingredients:
  • 2 chicken breasts
  • 2 cups chicken broth
  • 1/4 – 1/3 cup buffalo sauce
  • 1/3 cup of cheddar cheese
  • Wanton wrappers
  • 2 egg whites
  • 2 full eggs
  • 1 1/2 cups of bread crumbs
  • ½ teaspoon Garlic powder
  • Oil

 

Directions:
  1. Boil your chicken breasts in the broth;
  2. Once cooked thoroughly, place the chicken in a bowl and use 2 forks to shred it or you can use a processor;
  3. Add the buffalo sauce to the shredded chicken; (If you want it to be a bit spicier use the 1/3 cup of sauce otherwise the 1/4 cup will be enough.)IMG_2107
  4. Add the cheddar cheese to the buffalo chicken and mix;
  5. Lay out individual wonton wrappers;
  6. Place about 1 teaspoon of the buffalo chicken mix in the wonton wrappers; IMG_2114
  7. Put the egg whites in a bowl and use them to wet around the buffalo chicken mix in the wonton wrappers and fold them over; IMG_2123
  8. Place and whisk the full eggs in a bowl and put the wonton wrappers in the egg mix coating both sides;
  9. Place the bread crumbs and garlic powder in a bowl and put the wonton wrappers in the bread crumbs coating both sides;
  10. Fry the bites, being sure to flip them; (I fried each side for about 3 minutes each.)IMG_2131
  11. Serve with some ranch dressing and enjoy!
