Danielle’s Game Day Dish: Week 12

Wooo whooo the wins are back!

The Vikings won this past Sunday against the Arizona Cardinals ending their four-game losing streak and giving fans something extra to be thankful for this year.

This week the Vikings are playing the Lions on Thanksgiving. The Vikings have already played, and lost, against the Lions so this game is a chance at redemption. During past Thanksgiving games, the Vikings have done a great job winning so let us all hope they will continue to win on this great day.

Okay, so think back to all of your prior Thanksgivings. Imagine all of the amazing things and feelings you have on this day: family, friends, a sense of welcoming, warmth, a television to watch the game on, a beautiful glistening turkey, and lastly, but possibly most importantly, dessert.

My family (really, my Mom) has always put out enough food to feed about 100 people for every holiday. Despite her putting out so much amazing food that we all gorge on, dessert is the star of every holiday. It is not unheard of for my mom to put out five different pies, ten different cookies, cakes, cup cakes, cannolis, and anything else any family member requests from her.

Knowing that the game is on Thanksgiving and everyone needs some sort of dessert to serve other than pumpkin pie, I decided to make one of my favorite cookies that my mom makes for every holiday, cake batter chocolate chip cookies.  Honestly, these cookies are like a mix of my favorite cookies and my favorite cake: chocolate chip and funfetti.

These cookies really are great. They may have a good handful of ingredients but everything truly comes blissfully together. Even though I am sure by the time everyone gets to dessert they are already stuffed, we always room for some sort of treat and these are the perfect treats.

The cookies are light and fluffy meaning that first bite will bring you right into cookie joy. The middle is always soft and you can taste the ways the sugars and cake mix come together with a sweet flavor. But you can also taste how the chocolate chips break up some of the sweetness to ensure it isn’t overpowering. Once you combine those things with the pop of color from the sprinkles, you know these cookies will bring you as much joy as a touchdown.

I truly hope everyone not only enjoys these cookies, and has an amazing Thanksgiving. Enjoy this time with your family and friends and make some amazing memories to look back at next year. Cake Batter Chocolate Chip Cookies

Ingredients:
  • 1 1/4 cup all-purpose flour
  • 1 1/4 cup yellow or white boxed cake mix
  • 1/2 teaspoon baking soda
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 cup chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup sprinkles
Directions:
  • In a large mixing bowl, sift together flour, cake mix, and baking soda.
  • In a medium mixing bowl, cream together the butter and sugars on medium speed until light and fluffy.
  • Mix in the egg, vanilla extract, and almond extract until creamy.
  • Add the dry ingredients from the first bowl to the wet ingredients and mix until just combined.
  • Fold in the chocolate chips and sprinkles.

  • Cover and refrigerate the dough for at least 1 hour.
    • This is a necessary step due to the stickiness of the dough. It will also help prevent too much spreading while baking the cookies
  • Preheat oven to 350 degrees.
  • Scoop the dough onto an ungreased baking sheet and bake for 10-12 minutes.

  • Allow the cookies to cool on the baking sheet for a couple of minutes and then transfer to a cooling rack.
