Danielle’s Game Day Dish: Week 2

After a rough start on offense, our men in purple pulled through last week and we won our first official game of the season! Also, a shout out to NFC’s  Defensive Player of the Week, our very own Eric Kendricks!!! I have the utmost faith in our men to keep us going and continue to bring us as many wins as necessary to make it to the Super Bowl.

As I have previously stated, in past seasons I have always made a dish that represented the opposing team. During that time, I created the following recipe and when I started doing these weekly posts, I knew that I was going to feature it because although Vikings fans are not into the Packers, everyone is into cheese.

Let us just take a moment to conjure up this goodness in our minds. Tender, salty hash browns infused with the flagrant flavors of onion and garlic. Mixed in with those amazing potatoes is hot, gooey, melted cheddar. On top of all that, is a spectacularly salty, cheesy crunch from Cheez-It crackers.

This is a slow cooker meal, which I love because you can set it and forget it. It is also perfect for bringing to someone’s party, especially since it is so easy to make. Do yourself a favor and purchase some slow cooker liners for easy clean up, you will thank me later.

I hope everyone enjoys this meal. Although it is something that more closely represents an opponent, some flavors in food make you get over that. Slow Cooker Cheesy Chicken and Potatoes Casserole

Ingredients:
  • ½ cup butter, melted
  • ¼ cup minced onion
  • 1 tablespoon minced garlic
  • 1 package frozen hash browns
  • 1 can cream of chicken
  • 1 ½ cups of milk
  • 2 cups shredded cheddar cheese
  • 2 chicken breasts cooked in salt and pepper and diced
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ box of Cheez-It crackers smashed into crumbs
    • You can use any flavor of Cheez-It Crackers you would like, but my favorite is the mixed box of cheddar and parmesan
Directions:
  • Place your crock pot liner in the crock pot;
  • Place all of your ingredients and half of the Cheez-It crumbs in the crock pot and mix them all together;

  • Place the rest of the cheese cracker crumbs on top;

  • Cook for 6-8 hours on low and 3-4 hours on high;
  • Serve and enjoy!
